Risotto Freak

If I could eat risotto every day of the week, I would. Actually, I have. Lately it’s all I want to fix for dinner so that’s what I make. Poor Mike is going to get sick of it pretty darned quick, but that’s why I bake him bread. He can have a sad little Swedish sandwich instead. I do make it pretty low fat–just a couple of tablespoons of low fat cheese to give it a little creaminess so I figure it’s good for me. I put a lot of beans in it, bell pepper, carrots, onion, garlic. . . good stuff.

Today has been totally crazy. Mike didn’t go to work, so we’ve been taking care of a lot of pre-move business. We were all over down in the freezing cold snow, getting hit in the eyeballs by shards of frozen water. Not fun. Not fun at all. I can’t believe we have to be out of this apartment in 12 days! I need to start packing up the dishes and throwing out all my old, holey underwear.

I made truffles today and let me tell you one important fact of life–burnt chocolate tastes nasty. I don’t think I’ll ever become a candyateer (is that the word for candy maker?). It’s not good for my waste and I’m not good for delicate operations. Oh well.

I also got some good work done on MM, though I still have a huge pile of stuff left to edit. I would also really like to publish a humor piece that somehow fits the theme “transformation.” If you’ve got anything, please, please, please let me know. I’d love to take a look and see if it’s appropriate for our little project.

That’s all I can think of for today. You’ll have to come back another day for inane rambling from the queen. My head is spinning out of control right now.

    What I wouldn’t do for some real candy from Europe. A friend once sent me some and I was in heaaaaven. It’s soooo much better then american. :P

    Would you mind sharing your recipe for risotto? I have tried again and again but always fail. I need a foolproof recipe.

    Risotto is sooo hard to make. I love it, but can only manage to make it on special occasions. All that simmering and adding more liquid…..I just haven’t the patience.
